Almond Joy Lava Cake


Lava cakes have always been one of my favorite desserts to order out at restaurants. I wanted to make this gluten free and as healthy as possible. This easy, quick, healthy recipe will sure impress any of your guests.

Cocoa powder, for sprinkling
¼ cup coconut oil
3 ounces dark chocolate (I used 70%)
1 egg
1 egg yolk
¼ cup coconut palm sugar
¼ teaspoon vanilla extract
pinch of salt
2 tablespoons Cocoa powder
1 tablespoon almond butter, smooth


Preheat your oven to 400 degrees
Rub 2 ramekins with coconut oil and sprinkle cocoa powder so that the insdie is fully covered, set aside
In a large, microwave safe bowl, melt the coconut oil and chocolate in the microwave. Stir when all chocolate is melted, set aside
Whisk together coconut sugar, vanilla extract and salt
Whisk together the egg and egg yolk, then pour into the chocolate mixture
Mix in the sugar mixture to the chocolate mixture and keep mixing till all is blended
Gently fold in the cocoa powder
Divide batter between ramekins, filling only half way up
Place ½ tablespoon of almond butter in the center of each ramekin
Gently divide the remaining batter, so the ramekins are just over ¾ full
Place in the preheated oven and bake for about 10 minutes
Remove from the oven and let them stand for a minute or two
Then gently, run a knife along the outside of the ramekin and place upside down on to plate
Devour immediately!
