Apple Cider Donuts


Fall is one of my favorite seasons, I love the changing leaves and mostly I love apple and pumpkin everything. Bennett and I love visiting  Equinox Resort in Manchester, Vermont; one great thing about visiting there is they have these AMAZING Apple Cider Donuts. Obviously they are not Paleo by any means. After our last visit I came home determined to make a Paleo version. These bite size donuts taste like fall melting in your mouth, you must make these this fall.

For the donuts
½ cup almond butter
½ cup apple cider
1 apple, peeled, cored and finely shredded (equivalent to almost 1 cup)
1 egg
½ teaspoon apple cider vinegar
½ cup tapioca flour
2 tablespoons coconut flour
½ cup coconut sugar
½ teaspoon baking soda
½ teaspoon baking powder
pinch of sea salt

For the cinnamon sugar coating
½ cup coconut sugar
1 tablespoon of cinnamon


For the donuts
Preheat oven to 350 degrees
In a large mixing bowl, mix together almond butter, apple cider, shredded apple, egg, and apple cider vinegar (I used my hand mixer)
In a separate bowl, sift together tapioca flour, coconut flour, coconut sugar, baking soda and powder, and salt
Add dry ingredients into wet ingredients and mix well (I used my hand mixer)
Spray your donut pan with spray oil
Pour the batter into a piping bag and pipe into the donut pan
Bake for 10 minutes
Remove and let cool completely

For the cinnamon sugar coating
Brush cooled donuts with melted ghee or coconut oil
Toss the donuts into the prepared coconut sugar mixture

Makes 12-18 donuts based on how big your donut pan is (I used a mini donut pan)
