Bacon and Apple Caramelized Onions

This particular recipe is good one to start the night before or at the latest the morning before you want to use these caramelized onions. The reason is that cook, low and slow in a slow cooker allows you to get a deep rich caramelization that you may not achieve when you are rushed during the week. The apple variation is ideal for pork chops and pair very nicely. This makes enough for several meals so you can use it as a burger topper or side throughout the week.

Ingredients

6-7 slices of bacon, chopped
6 yellow or white onions, thinly sliced
1 cup applesauce (optional)
Sea salt and fresh cracked pepper to taste

Directions

Chop the bacon and place in the bottom of your slow cooker
Set the slow cooker to the maximum time and lowest temperature setting
Slice the onions and place them in with the bacon
You can mix them around so that the bacon fat coats the onions
Add some sea salt or pepper if you desire
Allow the mixture to cook for 10 hours plus at the lowest temperature setting
Combine with applesauce at the end and let the applesauce warm up with the onion mixture
Serve on top of pork chops, burgers, chicken or any protein that you so wish!
