Bacon Topped Meatloaf

MeatloafSo this isn’t your momma’s meatloaf, but it is a recreation of childhood favorite and one of my favorite comfort foods. It was also for an opportunity for me to sneak some offal (liver) into the dish without disclosing it to Dana until she was going back for a 2nd plate of Meatloaf. Dana doesn’t like certain textures and Beef Liver happens to be one of those textures. I have cooked it with bacon and onions and even snuck it into chili, but to no avail she detects the texture and no longer enjoys the meal. This nutrient packed meatloaf will fill you up and take you back to a great comfort food from days of past.

2 pounds ground meat (I used 1 pound of lamb an beef, combined)
2 pieces of liver, food processed
6-8, slices, bacon
6 cloves garlic
1 red onion
1 bunch, flat leaf parsley
1 cup, chopped mushrooms (I used baby bellas)
2 eggs, whisked
½ cup almond flour
1 tablespoon salt
1 tablespoon harissa (you can substitute 1 tomato paste with ground pepper)
1 tablespoon dried oregano
1 tablespoon dried basil
1 – 6 ounce can of tomato paste
3 sprigs, rosemary (one to garnish)
Goat cheese (primal optional)
Spinach (optional)


Preheat your oven to 400 degrees
Food process liver and 2 slices of bacon, and add it to ground meat
Food process garlic, onion, parsely, mushrooms until fairly well chopped
Add the mixture to the ground meat with liver and bacon
Add almond flour, salt, harissa, eggs, oregano, and basil
Combine well by first washing your hands and bringing the mixture together
You can now lay our the mixture on clear plastic wrap on the counter
If you are using spinach and goat cheese, then place in the center and roll the meat over the spinach and goat cheese to keep it in the center
Carefully place the meat mixture on a baking sheet
Top the meat with tomato paste (first). Sprinkle on chopped rosemary from one of the sprigs, and cut remaining slices of bacon in half and add
Bake for about 50 minutes and let rest for 10 minutes before serving

Serves 4

Serve with the following sides: Cauliflower or Root Vegetable Mash or Sauteed Spinach
