Basic Broccoli Soup


Have you ever tried to consume an entire head of broccoli? It is no small task and let’s be honest; it’s not the most exciting meal in the world. Here’s a way to make some basic broccoli soup and devour a bunch of this dark green vegetable with easy. Dana and I enjoy this soup on a regular basis to take advantage of the nutrient dense vegetable in a very enjoyable way!

2 pounds of broccoli (about 1 large head of garlic)
4 leeks, cleaned and trimmed (white part only)
1 large onion
3 medium shallots
6 garlic cloves
3 tablespoons coconut oil (or grass fed butter)
2-3 cups chicken stock
Sea salt to taste
Fresh cracked pepper to taste

Trim and chop the broccoli into florets. You can use the stems interior by removing the woody exterior
Roughly chop the alliums (onions, shallots, and leeks) with garlic
Sauté mixture with coconut oil in large Dutch oven for 5-10 minutes until soft
Then add, the broccoli and chicken stock to the mixture. Get the vegetables as close to fully submerged as possibl
Season with salt and pepper
Bring to a boil, then reduce heat and simmer for 25 minutes
Add the hot mixture to your Vitamix and blend on HIGH for about 60 seconds until smooth
Try a spoonful and adjusting seasoning based on taste
