Broccoli and Bacon


Take most vegetable, add some bacon, and roast for about 40 minutes, and you’ve turned what some might see as a boring dish into something delicious.  I made this for Dana and I to accompany some Asian inspired short ribs.  She was pleasantly surprised by roasted flavor of the broccoli, which complimented the slowly cooked beef.

2 heads organic broccoli
3 slices thick sliced bacon, chopped
6 garlic cloves
2 tablespoons beef tallow from Fatworks (or your preferred fat)
Sea salt to taste
Fresh cracked pepper to taste


Preheat the oven to 400 degrees
Take the broccoli crowns and remove the heads to divide into florets
Cut around the stem to remove the woody exterior
Chop up the soft interior and add to the florets
Combine the chopped bacon, broccoli, garlic, tallow, sea salt, and pepper on to a roasting pan
Roast for about 40 minutes
