Caramel Spiced Apple Waffles


Inspired by Against All Grain, we took a shot at making our version of her Caramel Spiced Waffles. They came out great and we were disappointed we didn’t make of these. I could imagine asking my mom to make these very Sunday growing up and I am sure your kids will too!

From our kitchen to yours, Bennett


For the batter
3 large eggs
¾ cups raw cashews
¼ cup raw pecans
¼ cup coconut flour
¼ cup unsweetened almond milk
3 tablespoons coconut oil, melted
2 tablespoons honey
1 tablespoon applesauce
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
¼ teaspoon salt

For the syrup
3 tablespoons butter
¼ cup honey
½ cup applesauce
¼ coconut milk
pinch of salt


For the batter

Mix the eggs, coconut oil, almond milk, applesauce, and honey together in a Vitamix blender
In your dry container for your Vitamix, add the nuts and pulse until well combined
Take the nut mixture, spices, and coconut flour and add it to the wet mixture in the other Vitamix container
Blend for about 30-45 seconds until well combined
Turn on your waffle maker to medium and pour batter into the center accounting for the fact that it will spread out when you press down the top
Cook for about 2 minutes, which will vary greatly depending on your waffle maker

For the syrup
Melt the butter and the honey to a saucepan
Bring the butter and honey to boil, and then add the applesauce
After about 5 minutes add the coconut
Allow simmering for about 10-15 minutes
Let cool for 5 minutes to thicken and serve over waffles
