Chia Seed ‘Oatmeal”


When I discovered I have an egg allergy that was leading to daily migraines and headaches I immediately had to come up with alternate breakfast options. Bennett mentioned trying making different puddings and ‘oatmeal’s’ with chia seeds. I did some research and found out that the word “Chia” means strength; folklore has it that the Mayan and Aztec cultures used the tiny black and white seeds as an energy booster. Chia seeds are a concentrated food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.  Egg allergy or not give this recipe a try. If your following a strict Paleo diet this wouldn’t be ideal because the recipe calls for Rolled Oats, which are not Paleo.

¼ cup Chia Seeds
4 cups Almond Milk
2 teaspoons Cinnamon
½ cup Rolled Oats
3 Apples (cored and diced)
Maple syrup or raw honey (to taste)

Add chia seeds, almond milk, cinnamon, and oats to a medium pot and bring to a boil
Stir and continue to cook until the chia thickens the liquid, and the oats soften, about 2-3 minutes
Stir in the apples
Dish up and serve drizzled with maple or honey
