Chocolate Chip Paleo Donuts


This was my second shot at making these donuts. The first time I tried to not use a sweetener and use bananas instead; the combination didn’t work out. This time I think I nailed it. These are a yummy treat!

2 cups all purpose gluten free flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon sea salt
½ cup honey
6 tablespoons melted coconut oil
⅔ cup coconut milk
1 ½ teaspoons vanilla extract
2 large eggs, at room temperature
1 cup mini chocolate chips


Preheat oven to 350 degrees
Spray your donut pan with coconut oil
In a medium sized bowl combine flour, baking powder, baking soda and salt and whisk until well combined
In another bowl heat up the honey for 10 seconds in the microwave
Add in the coconut oil  to the warm honey and stir until combined
Add in the coconut milk and vanilla extract and stir until combined
Add in the eggs and whisk until combined
Gradually add the wet mixture to your dry mixture
Fold in your chocolate chips
Transfer your batter into a piping bag and fill each donut cavity in the pan
Bake for 10 minutes, let cool and then carefully place on a cooking rack
