Cinnamon Apple Walnut Muffins

AppleMuffinsI love apples and they are always in season. Apple pie was one of my favorite desserts when I was growing up; I used to make my grandmother make a separate pie on Thanksgiving so I could bring that pie home with me. These muffins remind me of mini apple pies, which also makes me think of my “Grams”. Try them out for a new breakfast option.

2 cups almond flour
¼ teaspoon salt
1 teaspoon cinnamon
½ teaspoon cardamom
1 teaspoon baking powder
2 eggs
¼ cup honey
¼ cup ghee/coconut oil
½ cup walnuts – chopped
½ cup grated apple/2 small apples

Preheat oven to 350 degrees
Spray muffin tin with coconut oil spray
In a large bowl, mix almond flour, salt, baking powder, cardamom and cinnamon
In another bowl whisk together eggs, honey and ghee
Pour wet ingredients into dry ingredients and mix well
Add grated apples and walnuts, fold gently until combined
Divide the batter in muffin cups
Smooth out the top to the cups with wet spoon
Bake for 20-25 minutes, until muffins are golden brown and toothpick comes out clean
Let them cool on wire rack
