‘Creamed’ Spinach w/ Pancetta

Is there anything that pairs better with red meat than creamed spinach? You may think to get creamed spinach to mimic what you have had at your favorite steakhouse that you need heavy cream. This dairy-free version is full of flavor and won’t give you any issues with lactose.

3 – 10 ounce packages of frozen spinach, thawed and drained
½ pound pancetta, chopped
1 cup coconut milk
1 teaspoon coconut flour (almond flour maybe substituted)
2 shallots, chopped
4 cloves, garlic
Juice from ½ lemon
1 teaspoon coconut oil
Sea salt


Heat a skillet with coconut oil and add Pancetta
Brown the pancetta and set aside
Add the shallots and garlic for about 1-2 minutes
Mix in the spinach and allow it to cook for about 4-5 minutes
Add coconut milk, flour, lemon juice, and sauté for another 5 minutes
Add back the pancetta and spices to taste

Serves 4

Pairs nicely as a starter for any of our Main Dishes
