Dark Chocolate Orange Mousse


Sometimes you just crave a rich dark chocolate dessert, and when that craving comes I usually whip up a pot de crème or chocolate mousse for a special treat.  I like combining chocolate with orange because I think it brings out some subtle flavors enriching the dark chocolate taste. Top this with some spiced whipped cream and you will have a heavenly chocolate dessert.

10 ounces dark chocolate, melted
8 eggs, separated
½ cup orange blossom honey
½ cup olive oil
Zest of 1 orange
1 teaspoon sea salt


Melt the dark chocolate in a double boiler or in a metal mixing bowl over heated water
Separate the eggs, leaving the egg whites on the side
Mix the egg yolks with the honey and olive oil
Add the chocolate and combine well
Using a hand mixture, whip the eggs whites until it forms peaks
Fold in the egg white with the orange zest and sea salt
Place the mixture into glass and add to the place in the fridge
Refrigerate for at least 4 hours before serving

Serves 4
