Grilled Beets with Walnuts and Goat Cheese


Ever grilled beets? My neighbor looked at us with amazement as well placed beets on the grill and served them with salmon the other night. He said that he had grilled a lot of things, but never beets. Dana and I are hear to say add them to your grilling list.  In this recipe, you parboil them, lightly marinade them, and combine them with walnuts and goat cheese. The result is simply delicious.

6 large beets
1 cup walnuts
⅔ cup goat cheese (optional for primal diets)
⅓ cup olive oil
3 tablespoon grass-fed butter
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon basil
1 teaspoon cayenne
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon sea salt
1 teaspoon fresh cracked pepper


Place the beets in a large stove pot and fill with water until well covered
Bring the beets to boil and set aside
Mix marinade by combing the oregano, thyme, basil, cayenne, paprika, onion powder, salt, pepper and olive oil together
Slice the beets, discarding each end into ½ inch cuts
Place the beets in a bowl with marinade
While the beets marinade, melt the butter with the walnuts, salt and pepper.
Grill the beets under medium to high heat on the grill for about 2-3 minutes on each side
Combine the walnut mixture with the grilled beets and goat cheese

Serves 4
