Grilled Butternut Squash


This fall vegetable can make a nice appearance in the summer when you simply dress it with oil, salt, and pepper and place it on your grill. Served with a meaty fish like Swordfish or accompanying a ‘bun-less’ burger and you have a great, delicious summer meal! Enjoy

Butternut Squash, peeled and cut into ½ inch discs
2 tablespoons olive oil
Sea Salt
Fresh cracked pepper


Set the grill to medium high heat
Take the peeled and cut squash and coat with olive oil
Sprinkle on sea salt and pepper generously on each side
Grill for about 5 minutes on each side
Serves 4
