Grilled Lamb Chops


We eat a lot of lamb, I mean, have you ever seen a blog more dominated by lamb recipes relative to beef. Anyhow, summer is a perfect time to break out lamb chops, give them a nice grill, and enjoy them perfectly medium rare. I always make at least 8 chops, which serves two in this family.

1 Rack frenched lamb chops (cut into 8 chops)
2 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon oregano
1 teaspoon basil
1 teaspoon sea salt
1 teaspoon black pepper


Pat your lamb chops dry
Generously salt each side and place in a Ziploc bag
Mix the vinegar, mustard, oil, garlic, and spices together
Dress over the lamb in the Ziploc and refrigerate for 8 hours
Heat the grill to medium and grease the grill for nice grill marks
Grill on each side for about 2 minutes
Set aside and enjoy about 10 minutes later

Serves 3- 4 (2-3 chops per person)
