Homemade Coconut Milk

Ok so if you get tired of searching your local supermarket for coconut milk that doesn’t have guar gum or some other preservative that might upset your stomach, then you can always make this recipe at home.  Dana and I add it to our coffee in the morning and use it to cook with when we are making our favorite Thai dishes, baking or making creamy soup.

From our kitchen to yours, Bennett

1 and ½ cups shredded coconut flakes
2 and ½ cups boiling hot water
Cheesecloth and Strainer

Place the coconut flakes in your  Vitamix (or other high speed) blender
Take very hot just boiled water and add it to the coconut
Blend on high for about 5 minutes
Pour into cheesecloth allow liquid to go into you storage container (e.g. Mason Jar)
Allow the mixture to cool
Finish straining to remove as much liquid as possible
Discard remaining coconut meat left in the cheesecloth
