Ice Cream Sandwich

icecreamsandwhich2

The summer is here and my favorite thing to eat this season is ICE CREAM!Bennett loves cookies so I thought I would combine our two favorite sweets and make an imitation of the ice cream man’s cookies sandwich. This is a great treat for the family on hot days.

From our kitchen to yours, Dana

Ingredients

For the cookies
¼ cup grass-fed butter
¼ cup coconut palm sugar
2 tablespoons honey
1 large egg, room temperature
2 teaspoons vanilla
1½ cups blanched almond flour
2 tablespoons coconut flour
½ teaspoon baking soda
½ teaspoon sea salt
¼ cup chocolate chips

For the ice cream
½ cup (about 8) soft, pitted Medjool dates
1 (13.5-ounce) can full-fat coconut milk
1½ cups almond milk
1 tablespoon vanilla extract
Optional: unflavored gelatin (this will help the ice cream not form crystals to save the leftovers for another treat night)

Directions

For the ice cream
Preheat oven to 350 degrees
In a food processor, cream the palm shortening, coconut sugar, honey, egg, and vanilla for about 15 seconds until smooth and fluffy
Add the almond flour, coconut flour, baking soda and sea salt and mix again until combined, about 30 seconds. Scrape down the sides of the bowl if needed in order to incorporate all of the flour. Pulse once or twice more
Stir in the chocolate chips by hand
Place golf-ball sized balls of dough on a cookie sheet lined with parchment or a SilPat. Using another sheet of parchment on top of the dough, flatten them slightly with the palm or your hand or a spatula. The cookies don’t spread much so create the size and thickness you want prior to baking them
Bake for 9-12 minutes, until slightly golden around the edges

For the ice cream
Place the dates in your blender (I used our Vitamix)
Pour in the coconut milk and purée until smooth
Add the almond milk, vanilla extract and gelatin, blend until smooth
Place in your refrigerator until the mixture is cold
Pour the mixture into your ice cream machine and follow the manufactures instructions (I used my kitchen aid mixture attachment)

To assemble
When the ice cream is done place one cookie on the bottom, place a scoop of ice cream in the middle and top with another cookie.

Enjoy
