Mint Pesto


Mint jelly? Mint gastrique? Mint Pesto? Regardless of the minty concoction mint sauces seems to be the quintessential pairing with lamb. Since its lamb season, this mint pesto is designed to pair with leg of lamb or lamb loin chops. It’s super easy, quick and delicious.

Packed cups mint leaves
1 cup fresh basil
1 cup fresh Italian flat leaf parsley
1/3 cup blanched almonds
1/3 cup pine nuts
4 garlic cloves
1/3 cup olive oil, plus more if necessary
1 tablespoon lemon juice
Pinch of cayenne pepper
Sea salt
Freshly ground black pepper

Combine ingredients in a food processor
Pulse until well combined then let the food processor run for about 20 seconds
Add more olive oil if too thick
This serves about 4, so double the recipe if you just roasted a huge leg of lamb

Makes about 1 1/2 cups
