Paleo Chocolate Chip Cookies


Bennett’s favorite cookie is chocolate chip. The first time I made these was for a treat for him on Valentine’s Day. I thought it was fitting to make them in heart shapes; so now I always do! When I make these they are gone within the day. Make these healthy heart shaped cookies for all your loved ones.

10 tablespoons coconut oil, melted
8 tablespoons maple syrup
8 teaspoons pure vanilla extract
4 tablespoons unsweetened almond milk
4 cups blanched almond flour
½ teaspoon sea salt
1  teaspoon baking soda
⅔ cup chocolate chips (I use a bit more)


Preheat oven to 350 degrees
In a medium bowl, add the coconut oil, maple syrup, vanilla, almond milk, and beat to combine (use a hand mixer or beat with a whisk)
In a separate bowl, combine the almond flour, salt, and baking soda
Stir well
Add the liquid mixture to the dry mixture and stir until combined
Fold in the chocolate chips with a spatula
Line a baking sheet with parchment paper (To make mine heart shaped I put a heart shaped cookie cutter on the parchment paper and scoop the batter into the heart and lift the cookie cutter when filled. Or you can simply scoop rounded tablespoons of batter about two inches apart. )
Bake for 16 to 18 minutes, until the tops are lightly browned
Remove from the oven, and allow to cool for a few minutes before transferring to a wire rack
