Paleo Lamby Joes


I saw this on Paleo Newbie and it made me think of these “Lamby Joes” that I had at Six Plates Wine Bar in Durham, NC. The restaurant owner, Matthew Beason would not give me the recipe, but I knew it started with ground lamb and chorizo. I took my best shot at combining both recipes into something that laughs loudly at the “hamburger helper” version that some of use were forced to eat as kid. It is now transformed into something a little bit more sophisticated, but not to serious. Make these for your kids or just be a kid again!

6 Sweet Potatoes
2 pounds ground lamb
1 pound ground chorizo
1 yellow onion
½ cup celery
3 garlic cloves, minced
1 red pepper, chopped
1 green pepper, chopped
1 28-ounce can diced tomatoes
2 6 ounce can tomato paste
2 tablespoons raw honey
1 tablespoon ground cumin
1 tablespoon chili powder
Sea salt and fresh cracked pepper to taste


Preheat to oven to 375 degrees
Poke 5-10 holes in 6 sweet potatoes and wrap in foil
Place in the oven and bake for 45-50 minutes
Meanwhile in a large Dutch oven, sauté onion, celery, and garlic for about 5 minute
Add ground lamb and chorizo and cook until browned
Add spices, tomatoes, tomato paste, honey and peppers to the mix
Simmer for 15-20 minutes
Remove baked sweet potatoes and let rest for 5-10 minutes
Split them open and pour the Lamby Joe mixture into each sweet potato

Serves 6
