Paleo “Oatmeal” Cookies


My favorite cookies are oatmeal cookies. Oats are not Paleo so I never thought I would be able to make a Paleo version. While experimenting with different spices and flours I was able to develop a consistency that tasted just like oatmeal. I sometimes include raisins (which are not Paleo) but it’s a good treat. With the recipe you can choose to add raisins or substitute them for dark chocolate chips.

½  cup palm shortening
2 large eggs at room temperature
⅔ cups honey
2 teaspoons vanilla extract
8 teaspoons cinnamon
1½ teaspoons nutmeg
2 cups almond flour
4 tablespoons coconut flour
1 teaspoon baking soda
1 teaspoon sea salt
4 teaspoons finely ground flax seeds
1½ cups finely shredded coconut
½ cup raisins


Preheat the oven to 350 degrees
Place the shortening and egg in the bowl of a stand mixer and cream for 1 minute on high
Add the honey and vanilla and mix for another minute, until creamy
Place the cinnamon, nutmeg, flours, baking soda, salt, and flax seeds in separate bowl and mix with a whisk until blended
Slowly add the dry ingredients to the wet and mix for one minute, until combined
Scrape down the sides of the bowl, then mix again for 30 seconds
Add the coconut and raisins and mix by hand with a spatula
Scoop balls of dough the size of a golf ball onto a cookie sheet lined with parchment paper (I like using an ice cream scoop)
Using a spatula gently press the balls down into circles about ¼ inch thick and 2 inches in diameter
Place in the oven and bake for 9 to 10 minutes, until the edges are lightly browned
Cool on a wire rack completely before eating
