Paleo Pumpkin Chili


Dana loves everything pumpkin and the fall is the perfect time for it. In this recipe we combined two of our favorite things. Pumpkin and game day chili. Try this out for next weeks games.

From our kitchen to yours, Bennett & Dana


2 pounds grass-fed ground beef
1 onion, chopped
6 cloves garlic, chopped
½ head cauliflower, chopped into large chunks
2 cups canned pumpkin puree
1-2 teaspoons of each: chili powder, cayenne pepper, cumin, paprika, crushed red pepper, thyme, oregano, sea salt and coarse ground black pepper
26 ounces strained tomatoes
1 cup beef broth
½ cup water


Over medium-high heat brown the meat in a deep pot
While browning the meat, add the onion, garlic and cauliflower
Once the onions are softened, add the pumpkin puree and spices, mix well to combine
Add the strained tomatoes, beef broth and water
Bring to a boil
Turn down the heat and let it simmer for 30-45 minutes

Serves 4-6
