Quick Tuscan Scramble


I’m often surprised when I hear people say that they simply do not have the time to make Breakfast, eat healthy, or pause to enjoy a meal. Some of our recipes are certainly not for weekdays, but this quick Tuscan scramble might surprise you especially if you pre chopped the ingredients on the weekend. Wake up 15 minutes earlier and enjoy some breakfast before starting your day. According to MyFitnessPal, this is about 500 calories and will have you satiated well into lunch. Enriching the meal, we used Porcini mushrooms for its nuttiness and firm texture, but really any mushrooms will do. Use some high quality extra virgin olive oil and the rest is down below…

3 eggs
8 grape tomatoes, quartered
1 shallot, minced
2 garlic cloves, chopped
2 medium sized Porcini mushrooms, chopped
5 basil leaves, chopped
1 tablespoon extra virgin olive oil
Sea salt and pepper to taste


Prepare your ingredients by chopping
Heat a sauté pan to medium and add extra virgin olive oil
Place the shallots, garlic and mushroom and sauté until soft about 4-5 minutes
Remember to season throughout with salt and pepper to your taste
Add the tomatoes and sauté for another 3 minutes
Add the eggs whole and scramble in the pan with a wooden spoon
Remove from heat after 4-5 minutes of cooking
Top with basil and serve

Total Time: 20 minutes
Total Cooking Time: 15 minutes
