Savory Waffle Bison Burger


Dana asked me where I got the idea for this, and it is kind of a funny story.  When I was walking our labradoodle, Madison, I was thinking about what to make for dinner: Chicken and Waffles. The only issue is that I didn’t have time to slow cook the chicken so I thought well I could make a waffle burger, right?  What we ended up with was a delicious savory waffle and a meaty bison burger that was delicious.

For the waffle
4 eggs
4 tablespoons coconut milk
3 tablespoons coconut oil
3 tablespoons coconut flour
1 teaspoon granulated garlic
1 teaspoon dried onion
1 teaspoon dried oregano
1 teaspoon dried parsley
1 teaspoon cayenne pepper
Sea salt and pepper to taste

For the burger
1 pound ground bison
1 tablespoon butter
1 tablespoon dried onion
1 tablespoon dried oregano
1 tablespoon dried parsley
1 teaspoon granulated garlic
1 teaspoon cayenne pepper
Sea salt and pepper to taste
4 Bacon Slices (optional)
1 White Onion for Caramelized Onions (optional)
1 avocado (optional)
Sir Kensington spicy brown mustard (optional)
Sir Kensington Mayonnaise (optional)


For the waffle
Place the eggs, coconut milk, coconut flour, coconut oil, and spices into a vitamix and blend at a low speed until well combined
Heat your waffle maker to medium and grease with coconut oil spray
Cook the batter in your waffle makers until slightly crisp and brown

For the burger
Place the bison and spices into a mixing bowl and combine well using your hands
Make 4 even sized patties using your hands
Heat a pan to medium high heat and after hot, place butter on pan
Sear the burger for about 3-4 minutes on each side
Set aside and start building your waffle burger, picking from optional sides above

Serves 4
