Japanese Sweet Potatoes with Garlic Herb Butter



On those days when you need some carbs and fat in your life, this is the dish for you. We really like the density of the Japanese sweet potatoes with its purple skin and buttery white interior. These potatoes are loaded with flavor and natural sweetness. In case these weren’t enough on their own, we pair them with our Garlic Herb Butter to knock your socks off…literally right off! The first time I made these, Dana said I hit a home run! Thanks wife!!

6-7 small organic Japanese Sweet Potatoes
1 tablespoon olive oil
Sea Salt
Garlic Herb Butter (see our recipe)
Chives to garnish (optional)


Start by preheating your oven to 425 degrees
Prick each one of the sweet potatoes several time with a knife or fork
Place the potatoes on a baking sheet and drizzle with olive oil and salt
Bake for 45 minutes or until soft to the touch
Let the potato rest for about 5 minutes, then split down the middle
Load up the potato with Garlic Herb Butter
Garnish with chives

Serves 4
