Spiced ‘Slow Cooker’ Applesauce

Through our Stony Hill CSA, we accumulated quite a few apples this fall. What do you do with all them apples other than the obvious choice of pie? You make applesauce! The first time I slow cooked applesauce with the cinnamon, cloves, ginger, and nutmeg, the entire kitchen came alive with the scent of fall. This recipe can be made to the consistency of applesauce and with a variety of apples making each batch your own unique concoction.

From our kitchen to yours, Bennett

5 pounds of peeled apples, cut into chunks (variety is fine. I used honey crisp, granny smiths, and pink lady)
1/3 cup apple cider vinegar
1/3 cup water
1 tablespoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg

Preheat your slow cooker to low
Peel, slice, and cut your apples into chunks
Place apple chunks into the slow cooker
Add cider vinegar and water along with your spices
Mix up the apples and spices
Let your apples slow cook overnight or for 8-10 hours
Stir the applesauce up in the crockpot (I left ours at this consistency)
If you desire, you can blend the mixture in your Vitamix or use an immersion blender in the crockpot

Serves 4-6
