Spicy Compote Butter Bison Burgers


Take some room temperature butter, Italian spices, a dash of cayenne, jalapenos with garlic and shallots, pair it with some ground buffalo, and what do you have?  Well, you have a spicy compote butter bison burger from Paleo Kitchen Stories.  In case, you didn’t know buffalo is delicious and has sweetness not found in lamb or beef. It isn’t gamy or fatty; it’s just really good!

1 pound ground buffalo
2 cloves of garlic, finely chopped
1 shallot, finely chopped
1 jalapeno, finely chopped (seeds removed)
3 tablespoons grass fed butter
1 teaspoon oregano
1 teaspoon basil
1 dash cayenne
1 teaspoon sea salt
1 teaspoon freshly cracked pepper


With 2 tablespoons of your room temperature butter, add oregano, basil and cayenne pepper
Mix the spices in well so they are well incorporated
Set aside or store in the fridge to remain solid
Combine ground buffalo with garlic, shallot, and jalapeno
Form into 4 patties and putting a thumb size of the butter in the center of the patty
Season with salt and pepper on both sides
Heat a cast iron pan to medium high and sear for 3-4 minutes on each side

Serves 4
