Strawberry Ice Cream


Strawberries are my favorite fruit and we all know I love ice cream. Strawberry ice cream has always been a favorite of mine. This recipe reminds me exactly of a pint of  Häagen Dazs ice cream. Try it out, you will know what I am talking about.

1 quart strawberries
8 egg yolks
2-13.5 oz cans of coconut milk
½ cup honey
2 teaspoons vanilla extract
⅛ teaspoon sea-salt


In a blender (I used our Vitamix) puree cleaned berries
Using the measurements on the side of the blender as a guide, continue to add strawberries to make 1 ½ cups of puree
In a mixing bowl beat egg yolks with a whisk until creamy and well whipped
Add the strawberry mixture to the eggs, then add in the coconut milk, honey, vanilla and salt; whisk again to combine
Then add this mixture to your ice cream maker and follow the manufactures directions
