Strawberry Waffles


Dana loves strawberries and for some reason you can always find strawberries at a good price in January. So we decided to whip up a recipe using fresh and frozen berries for the delicious breakfast treat.

5-6 frozen strawberries
1½ cups almond flour
½ cup potato starch or sweet potato starch
½ cup tapioca flour
2 teaspoons baking powder
¾ teaspoon sea salt
1 large egg
½ cup almond milk
¼ cup honey
¼ cup melted coconut oil
1 teaspoon lemon juice

Fresh strawberries for topping


Preheat a waffle iron
Cut frozen strawberries up into small pieces
Place the frozen strawberries in a mixing bowl with almond flour, potato starch, tapioca flour, baking powder and salt
Whisk until well blended
Add the egg, almond milk, honey, coconut oil and lemon juice; stir till combined
Spray your waffle iron with spray olive oil or coconut oil
Ladle the batter into the waffle iron and spread it evenly across the surface
Cook following the manufactures directions
Serve topped with sliced strawberries
