Sweet Apple Egg Muffins


One morning with 10 eggs, a cooked sweet potato, a Granny Smith apple, and some assorted seasoning, a breakfast legend was born. This protein packed breakfast is great for a Sunday brunch or simply for a morning on the run.  Combined with sweet potato and apples; it has a nice subtle sweetness.

10 eggs
1 medium sweet potato, cooked
1 apple, peeled, cored and chopped
Sea salt and pepper to taste


Preheat your oven to 375 degrees
Grease a muffin pan with coconut oil
Add the eggs, cooked sweet potato and apple to a high-speed blender
Pulse the ingredients until combined, but not too blended (you want some chunkiness and texture to remain)
Pour mixture evenly into the muffin tin
Bake for 20 minutes
Let rest for about about 5-10 minutes
Remove and serve

Serves 4
