I know what you are thinking: is oatmeal really that bad for me? Before I even go down that rabbit hole, why not consider an alternative that has become a staple in Dana’s diet. This recipe is near and dear to my heart because I grew up in Washington State, which prides themselves as the largest apple producer in the state. In fact, the annual college football rivalry game between the Washington Huskies and some other team is named the Apple Cup (GO DAWGS). Anyhow, when I am not eating local Empire State apples, I am getting my apples from my first “home.”
From our kitchen to yours, Bennett
2-3 medium sized organic washington red apples
1 ½ cups raw almonds
Cut up apples, we use an apple corer.
Start by grinding up your almonds in your blender till they are not whole anymore. We use our Vitamix.
Add your cut apples into the blender and blend for about 1-2 minutes
Scoop out of the blender into your bowl and sprinkle more cinnamon on top
Garnish with any left over apple slices
Pairs nicely with some morning breakfast sausage, some fried eggs, or even some grilled tomatoes
